Citrus (Clementine) Chicken: (alliteration ftw)
Cook chicken in olive oil in a skillet - keep warm after cooked (salt and pepper)
3 Clementines
2 Teaspoons corn starch
White wine vinegar (probably half a tablespoon?)
Oregano
Salt & pepper
1 Cup orange juice
2 Tablespoons and a half sugar
Cook in skillet - until boiling - stirring constantly. Will become clear and almost like a vinaigrette. Pour over chicken! MM.
Clementine-Orange Cookies
* 2-3/4 cups all-purpose flour
* 1 teaspoon baking powder
* 3/4 cup butter
* 1 cup sugar
* 1 egg
* 1/2 cup orange marmalade
* 3 clementines (keep some of the juice or it's too dry)
325 degrees - ten mins or so (golden-brown)

Salsaaa!!
I was craving salsa today, and roaming the internet attempting to find a recipe to make use of the can of tomato paste I had left (if you leave it, it goes moldy mm...).
I found a myriad of salsa recipes including tomato paste, however I had no jalapenos, and a majority of the recipes required.
So, I made this salsa, which turned out pretty good but perhaps needs more tomato!
Half can tomato paste
Tblspoon parsley
1/2 tblspoon oregano
salt and pepper
4 banana pepper slices (the pickled ones)
half roma tomato
olive oil (tblspoon around - not too much or it won't be thick)
3 cloves garlic (of course)
Saucepan, medium heat! SO good!

A Christmas Special - Makeshift Penne (aka: Tomato, dill, penne casserole)
This Christmas was the first I'd be spending alone with a boy, my boy. So, I had planned to make a turkey dinner, a typical holiday dinner, of sorts. Turns out Christmas Eve all the stores close at five, so, no groceries for me! Which resulted in this meal,as I looked around the place for whichever I could to throw together for a meal.. And here it is:
2 cups cheddar cheese grated
penne - boil and cook (put aside)
Mix: olive oil, oregano, 3 cloves garlic, dill, sesame seeds, salt and pepper, parsley and a tablespoon tomato paste to thicken it into a sauce.
Cook the mixture in a saucepan over medium heat - stirring often. Add cooked shrimp.
mix cooked penne with some of the cheese (to melt the cheese)
Place casserole in a greased (pam with olive oil) casserole dish, sprinkle remaining cheese on top
bake at 350 degrees

Garlic, and Other Spices
Today, I tried making a salsa, with random things I had in the house. I have noticed that cooking and baking is somewhat of a release from me(even if it is work and I could be relaxing on the couch instead).
But, it can be therapeutic for me, I can cook away my problems. It's much like when I am creating art. Art keeps more focused however. But, I love creating tasty 'dishes'.
It also, makes me feel closer to him (my Dad). I feel like I could relate to him, that maybe I picked up something from him, and I can know him through cooking. Since, my dad was a chef. And a great one at that.
So, I've started another blog where I'll post random recipes that I come up with on nights like this. When I am alone, hungry, and sad.
Since I have this insatiable love for garlic, I have used it partially for the URL. I'll probably re-name the blog if anyone else is able to come up with names (hint).
I have found a new love and a new passion, which existed, but I hadn't known existed.
I've found I have many, well "talents" I suppose (though, i don't wish to use that word because I feel it means I have completely accomplished being an artist, a cook, or whichever when I have not and never will). These talents are never practical. I don't know where I'm meant to be, or who I'm meant to be. But it's certainly not typical, sitting in an office. I want to explore, and I cannot wait to apply for my Masters. And continue to dabble in other things of interest.
I hope to never lose my passion, for anything. How quickly I become passionate over things that begin to hold my interest.
