Hummus recipe/Chicken

For Hummus you simply need a can of chickpeas, and tahini. Put the chickpeas with some of the juice in the can (1/4 cup maybe?), and a tblspoon of tahini (nut butter, like peanut butter), 4 tblspoons lemon juice (to preserve it), pepper, tablespoon olive oil, 1/2 garlic cloves (depending on intensity you prefer) a bit of salt, paprika and parsley to garnish.

I usually eyeball it so the amounts may not be perfect but it's VERY simple.. Just use a food blender..

Also, putting paprika and cilantro on chicken is a simple/easy way to make chicken taste amazing.

Next I'm going to try making cupcakes with buttercream coconut frosting.

Roasted Chickpeas

1 tblspoon/less olive oil
However many chickpeas you want(drained)
Garlic salt
Chili powder
Pepper
-In a sandwich bag mix until all covered

Preheat oven to 350 degrees. Place spread out on tinfoil on a baking sheet. Cook for fourty minutes. SO tasty.

Quiche




I wanted to make some quiche, however the vegetarian ones online had things which I didn't have. So, I added my own veggies.

1 Large(organic)Egg
1/2 Cup Milk
1 Red Pepper
Chedder Cheese
Salt and Pepper
Parsley
Garlic :)
Chickpeas (not many, just enough for the iron intake)


Preheat Oven 375 F.

Whisk together Egg and Milk - 2mins

Mix egg/milk with red pepper, cheese, parsley, salt and pepper, 2 cloves garlic (crushed).

Spoon tablespoon and a bit of mixture into mini-tart shells, cook for 25-35 mins depending on oven.

Pie. We all love pie ..

I know I just posted recipes but here's some more!

Chocolate Peanut Butter Pie

1 nine inch pie crust baked
2 cups milk
1 tbsp butter
4 egg yolks
1/4 cup sweetened cocoa powder
1 cup sugar
1/3 cornstarch
2/3 cup icing sugar
1/3 cup peanut butter

---Medium saucepan - combine milk, butter. Low heat. Bring to simmer.
---Medium bowl. Beat together egg yolks, cocoa, sugar cornstarch.
---Whisk 1/2 cup of hot milk mix into egg york mix. Whisk constantly. Boil two mins, stirring constantly. Cool.
---Mix icing sugar and peanut butter. Crumble mixture into pastry shell.
---Pour cool chocolate mixture over peanut butter crumbles.

Chill Two Hours

I Don't Know What to Call This One.. Feel free to suggest..

1 tbsp olive oil
1 tbsp minced garlic
chicken breast (3 lbs)
1 tbsp paprika (newly loved spice)
1 cup brown sugar
1 cup red wine
salt, pepper, parsley

Heat oil in a large skilet over med-high. Cook garlic until tender. Place chicken in skillet. Cook 10 mins each side (having salt and peppered them before) until juices run clear and chicken no longer pink. Drain oil from skillet. Sprinkle with paprika and brown sugar (all of it). Pour red wine over chicken. Cover and simmer for about 15-20 mins. Lightly baste while cooking. Add salt and pepper if needed.

Oatmeal Cookies

1/2 cup wheat flour
1/2 cup flour
1 tbsp baking powder
2/3 cup brown sugar
1 egg
1 tsp vanilla
1/2 cup rolled oats
1/2 cup almonds
1/3rd cup dark chocolate chopped
1/3rd cup vegetable oil ** I added more after because I altered the recipe by adding dry ingredients. so more than 1/3rd depending how much dry ingredients :)


Greek Salad!
4 lg tomatoes (romaaa) cut into chunks
2 med cucumbers into chunks (lovely word..)
1 cup feta cheese crumbled
2 tsp dried oregano (antioxidants!!)
2 tbs lemon juice
1 tbsp olive oil
salt and pepper to taste
10 black olives
Then add a dressing (balsamic works fine)

Avocado cheese dip
2 avocados
2 tbsp lemon juice
MASH TOGETHER
1 clove garlic
1/2 cup cream cheese
salt, pepper
paprika
BEAT with above
Serve with pita chips .. Don't refrigerate (will go brown/bad)


Pita Chips
pitas cut into little triangles
1/2 cup olive oil
1/2 tsp pepper
1 tsp garlic salt
1/2 tsp dried basil
COMBINE
Preheat oven to 350 degrees F. Brush pita triangles with mixture on both sides. Bake seven mins on each side or until brown/crispy on baking sheet. Sprinkle parmesan on each side.


Microwavable Fudge - SO easy. Make it. Now!

3 and 2/3 cup icing sugar (yeah it's fattening)
1/2 cup cocoa
1/4 cup milk
1/2 cup butter/margarine
1 tbsp vanilla
1/2 cup pecans/whatever you like in your fudge
--Combine sugar, milk cocoa and butter - microwave 2-3 mins
--Mix rest in with microwaved ingredients. Let sit in buttered square dish. YUM.

The One That Started it All - Jalapeno Chicken

This one is good with either potatoes or rice

2 pieces chicken
garlic
garlic salt
pickled jalapenos
oregano and basil
baby tomatoes
salt and pepper

(I don't know measurements as I do it randomly so I'll have to re-do it and write it down, but this was the first time I really tried cooking - this recipe!)

VANILLA ALMOND GLAZE (for cakes)
1 and 1/2 cup icing sugar
2 and 1/2 tblsp milk
1/4 tsp vanilla
1/2 tsp almond
1 tsp melted butter
--Mix ingredients, melt butter and add to ingredients after.

Drunken Shrimp

2 tblspoons parsley
3 tblspoons olive oil
Salt and pepper
2 tblspoons lemon
lemon grass stock in 4
2 jalapenos
2 teaspoons sugar

Cook in skillet medium heat
remove and add 1/2 cup VODKA
Cook 1 minute

Pour over rice
