Put the chickpeas with some of the juice in the can (1/4 cup maybe?), and a tblspoon of tahini (nut butter, like peanut butter), 4 tblspoons lemon juice (to preserve it), pepper, tablespoon olive oil, 1/2 garlic cloves (depending on intensity you prefer) a bit of salt, paprika and parsley to garnish. <br /><br />I usually eyeball it so the amounts may not be perfect but it's VERY simple.. Cook garlic until tender. Place chicken in skillet. Cook 10 mins each side (having salt and peppered them before) until juices run clear and chicken no longer pink. Drain oil from skillet. Sprinkle with paprika and brown sugar (all of it). Pour red wine over chicken. Cover and simmer for about 15-20 mins. Lightly baste while cooking. Add salt and pepper if needed.<br /><br />Oatmeal Cookies <br /><br />1/2 cup wheat flour<br />1/2 cup flour<br />1 tbsp baking powder<br />2/3 cup brown sugar<br />1 egg<br />1 tsp vanilla<br />1/2 cup rolled oats<br />1/2 cup almonds<br />1/3rd cup dark chocolate chopped<br />1/3rd cup vegetable oil ** I added more after because I altered the recipe by adding dry ingredients. so more than 1/3rd depending how much dry ingredients :)<br /><br /><br />Greek Salad!<br />4 lg tomatoes (romaaa) cut into chunks<br />2 med cucumbers into chunks (lovely word..)<br />1 cup feta cheese crumbled<br />2 tsp dried oregano (antioxidants!!)<br />2 tbs lemon juice<br />1 tbsp olive oil<br />salt and pepper to taste<br />10 black olives<br />Then add a dressing (balsamic works fine)<br /><br />Avocado cheese dip <br />2 avocados <br />2 tbsp lemon juice<br />MASH TOGETHER<br />1 clove garlic<br />1/2 cup cream cheese<br />salt, pepper<br />paprika<br />BEAT with above<br />Serve with pita chips .. Don't refrigerate (will go brown/bad)<br /><br /><br />Pita Chips<br />pitas cut into little triangles<br />1/2 cup olive oil<br />1/2 tsp pepper<br />1 tsp garlic salt<br />1/2 tsp dried basil<br />COMBINE<br />Preheat oven to 350 degrees F. Brush pita triangles with mixture on both sides. Bake seven mins on each side or until brown/crispy on baking sheet. Sprinkle parmesan on each side.<br /><br /><br />Microwavable Fudge - SO easy. Which resulted in this meal,as I looked around the place for whichever I could to throw together for a meal.. And here it is: <br /><br />2 cups cheddar cheese grated<br />penne - boil and cook (put aside)<br /><br />Mix: olive oil, oregano, 3 cloves garlic, dill, sesame seeds, salt and pepper, parsley and a tablespoon tomato paste to thicken it into a sauce. <br /><br />Cook the mixture in a saucepan over medium heat - stirring often. I have noticed that cooking and baking is somewhat of a release from me(even if it is work and I could be relaxing on the couch instead). <br /><br />But, it can be therapeutic for me, I can cook away my problems. It's much like when I am creating art. Art keeps more focused however. But, I love creating tasty 'dishes'. <br /><br />It also, makes me feel closer to him (my Dad). I feel like I could relate to him, that maybe I picked up something from him, and I can know him through cooking. Since, my dad was a chef. And a great one at that. <br /><br />So, I've started another blog where I'll post random recipes that I come up with on nights like this. When I am alone, hungry, and sad. <br /><br />Since I have this insatiable love for garlic, I have used it partially for the URL. I'll probably re-name the blog if anyone else is able to come up with names (hint). <br /><br /><br />I have found a new love and a new passion, which existed, but I hadn't known existed. <br /><br />I've found I have many, well "talents" I suppose (though, i don't wish to use that word because I feel it means I have completely accomplished being an artist, a cook, or whichever when I have not and never will). These talents are never practical. I don't know where I'm meant to be, or who I'm meant to be. But it's certainly not typical, sitting in an office. I want to explore, and I cannot wait to apply for my Masters. And continue to dabble in other things of interest.<br /><br />I hope to never lose my passion, for anything.
